1. Per preparare il risotto alle zucchine iniziate a tagliare le zucchine a cubetti fini (brunoise) e fatele rosolare in casseruola con olio e uno spicchio d'aglio schiacciato. 2. Fate prendere colore senza portate a cottura completa. Togliete quindi i cubetti di zucchina rosolati e nella stessa casseruola tostate il riso.
